Rock Cakes - The WWI Ration Treat

Cooking time: 20-25 mins.  Difficulty: Easy.

Introducing the humble rock cake. Made famous during the second world war due to their simple ingredients list and ease of baking, these rough and ready cakes can’t be beat when it comes to simplicity. They also team up perfectly with a cup of tea.

  • A wooden spoon

       (or food mixer if you don't want to put in the elbow grease)

  • A large mixing bowl

  • A set of scales

Equipment:
Ingredients:
  • 1 tbsp of cinnamon

  • 320g of self-raising flour

  • 100g of caster sugar

  • 260-300g of dried mixed fruit

  • 12-g of butter (or margarine)

  • 2 medium eggs

  • 25ml of milk
